
Hazelnut Caramel Parfait – the summer dessert from the freezer
Creamy, nutty and ready the day before – the freezer does the work
Hello foodies,
do you know the feeling? The guests arrive in two hours, and every time the dessert turns into a mad rush. This parfait is made for exactly that: you stir it together the day before, put it in the freezer overnight – and the next day you simply take it out.
The best part: you don't need an ice cream maker. The air comes from the whipped egg yolk and the cream, and that is exactly why the mixture becomes so delicate that it melts on the tongue. Add to that the crunch of the caramelised hazelnuts, a soft caramel core in the middle, and fine stripes of dark chocolate on top.
It looks like it came from a patisserie, but it's made in half an hour. The freezer takes care of the rest.

Step by step
Whipping up the parfait mixture
Whip the egg yolks and icing sugar until pale
Put the egg yolks with the icing sugar and the vanilla seeds into a bowl and whip everything with the mixer until really pale and airy. Feel free to take three to four minutes for this – the mixture should become noticeably lighter and visibly gain volume.
Why is this so important? This foam holds all the air that later makes the parfait creamy. An ice cream machine folds the air in; here you do it by hand – right now.


Gently fold in the cream
Fold the whipped full cream into the egg yolk mixture portion by portion using a dough scraper. Always work from the bottom to the top and take your time – vigorous stirring would destroy exactly the air you just whipped in.
Once the mixture is pale, light and even, you've done it. That is precisely the difference between a light parfait and a heavy cream.


Chop the hazelnuts and mix them in
Chop the caramelised hazelnuts coarsely with a knife – deliberately coarse, not fine. Small, crunchy pieces later provide the bite that makes this parfait special; chopped too finely, they simply disappear into the cream.
Mix the nuts into the mixture until they are evenly distributed. Keep a few back for the decoration.



Fill the donut moulds
Fill the mixture into a piping bag and distribute it across the donut silicone molds – around 50 g per mould, which makes 12 pieces. Smooth the surface with the angled spatula, so the parfaits will later stand neatly on the plate.
The ring shape is no coincidence: the hollow in the middle is exactly the spot where the caramel cream goes afterwards.


Freeze, fill and decorate
Freeze overnight
Into the freezer it goes. A few hours will do at a pinch, but overnight is better – and honestly, this is the most convenient part of the recipe, because you don't have to do anything for it.
Only when the mixture is properly frozen through can it be released cleanly from the silicone mold. Start too early and you'll lose that lovely edge.
Unmould and decorate with chocolate, caramel and nuts
Release the frozen parfaits from the mold – with the silicone mold this takes no effort at all. Place them on a tray lined with baking paper.
Temper the dark couverture and pipe it in fine stripes over the parfaits – a cornet or a piping bag with a very small opening is all you need for this.
Now the caramel cream goes into the hollow in the middle. Again, this works most neatly with a piping bag: that way the edge stays clean and the amount is the same across all twelve.
To finish, place the reserved caramelised hazelnuts on top. It's the contrast that makes it: creamy parfait, crunchy nuts, bitter chocolate. After that, the parfaits go back into the freezer until you serve them.

- Egg yolk mixture: Whisk egg yolk, icing sugar and vanilla seeds for 3–4 minutes until pale and airy.
- Cream: Fold in the whipped full cream in portions, working from bottom to top.
- Hazelnuts: Roughly chop the caramelised hazelnuts and mix in, keeping some aside.
- Fill the molds: Fill about 50 g each into the Donut silicone molds and smooth the surface.
- Freeze: Freeze overnight – only once fully frozen will the parfait release cleanly.
- Fill: Unmold and fill the hollow with Caramel cream.
- Decorate: Pipe Dark couverture over it in stripes, place hazelnuts on top and return to the freezer.

So it turns out perfectly every time
Really take the three to four minutes with the egg yolks. Whatever air doesn't get in here will be missing later in creaminess – and you can't make up for it afterwards.
You can stir in the first portion of cream boldly, it makes the mixture smooth. All further portions should only be folded in gently – that's how the parfait stays light.
Don't chop the hazelnuts too finely. Small, crunchy pieces are exactly the bite that sets this dessert apart from store-bought ice cream.
