Frozen Parfait with Red Berries

Fancy a dessert that delights your taste buds without too much effort? ;-)
Today, we're sharing a frozen parfait with red berries, perfect for rounding off your summer meals.
Smooth and slightly tangy, it can be prepared in advance and enjoyed nice and cold.

To make a frozen parfait in the Meringa log mould for about 8 people, you will need:
- 2 egg yolks
- 40gr of sugar
- 250gr of red berry purée
- 2 egg whites
- 50gr of sugar
- 200gr of heavy cream
Decorations:
- Strawberries
- Raspberries
- Edible flowers "rose petals"
Let's get started with the recipe!
First, in a large bowl, pour in 2 egg yolks and 40gr of sugar. Whisk together until the mixture turns pale.
In a bowl, pour 250gr of red berry purée and add the pale egg yolk/sugar mixture. Mix well with a whisk to obtain a smooth, homogeneous preparation.
Pour 2 egg whites with 50gr of sugar into a very clean bowl and whisk them into a firm meringue. Fold the meringue in several additions into the previous mixture. Stir gently with a whisk to ensure all the ingredients are well combined.
Finally, whip 200gr of heavy cream into whipped cream, firm but not too stiff, so it blends easily into the mixture. ;-)
Start by mixing with the whisk, then with a spatula to obtain a smooth, homogeneous frozen parfait. Transfer the mixture into a piping bag to fill the mould neatly.
Now grab the "Meringa" log mould, which is perfectly suited for this recipe.
Pipe the mixture into the mould, smooth off the excess with a small offset spatula, then tap the mould several times on your work surface to remove any air bubbles.
Then place the mould on a perforated tray and leave it in the freezer for at least 8 hours.
Once your dessert is fully frozen, unmould it onto a pretty plate or a log cake board.
Decorate with halved raspberries, sliced strawberries and a few dried rose petals.
Place your frozen dessert back in the freezer until ready to serve.
And there you have it — a delicious frozen parfait with red berries for a wonderfully refreshing dessert.
It will keep for 3 weeks in the freezer in a well-wrapped box.
