Cherry-Pistachio Clafoutis
Hello food lovers!
This time it's official, summer is here, and so are the fruits that come with it :-)
Today I'm sharing an ultra-quick recipe: a cherry and pistachio clafoutis! It's hot outside and we don't necessarily want to spend hours in the kitchen, but a little sweet treat is always welcome, right? ;-)

To make this clafoutis, you will need:
- 100g flour
- 90g sugar
- 30g almond flour
- 3 eggs
- 120g whole milk
- 120g heavy cream
- 400g cherries (unpitted)
- 30g whole pistachios
- 3 tsp pistachio flavoring
- A little snow sugar
Let's go! First, preheat your oven to 180°C (fan-assisted).
Wash, stem, and pit the 400g of cherries. I used a hard plastic straw (reusable), which is very handy when you don't have a cherry pitter :)
I know... Traditionally, cherry clafoutis is made with the pits in! But I'm on team no-pits ;-) And besides, it's safer with kids!

Next, in a bowl, pour 100g of flour, 90g of sugar, and 30g of almond flour.
Crack the 3 eggs and add them to the dry ingredients.
Gradually whisk together.

Beat vigorously if there are still a few lumps.
Then gently fold in 120g of milk and 120g of heavy cream.

Add 3 teaspoons of pistachio flavoring. Mix well.

For this recipe, I used a 22 cm tart tin. Spray it with release spray so your clafoutis won't stick to the tin once baked.
Arrange the cherries on the bottom of the tin.

Pour your batter over the cherries.
Bake for 30-35 minutes (with a pause after 10 minutes of baking!). I'll explain that below.
For even baking, use a perforated tray.

Roughly chop 30g of whole pistachios with a knife.
After 10 minutes of baking, scatter the chopped pistachios over the clafoutis. Return to the oven.

It's ready when the center of the clafoutis is firm and not wobbly.
Finally, dust the clafoutis with snow sugar. Snow sugar is like powdered sugar except it's moisture-resistant, and that's great! Once you try it, you'll love it! You'll see!

And there you have it, it's ready! Now the hardest part... Let it cool slightly before enjoying it ;-)
