Bread dough bunnies
Hey foodies!
Easter is just around the corner. So it's time to treat yourself with chocolate and spring desserts. ;o)
Here are my little bunny-shaped bread rolls.

This recipe can be made in a vegan version.
To make 6 bunnies, you will need:
- 260gr of milk (plant-based milk)
- 5gr of dry yeast
- 290gr of white flour
- 100gr of oat flour
- 1/4 tsp of salt
- 50gr of sugar
- 50gr of butter (plant-based butter)
- 6 mini carrots (found at Coop)
- 1 egg (plant-based milk)
Let's get started with the recipe!
Pour 260gr of milk (plant-based milk) into a bowl and heat it in the microwave for 30 seconds at 600Watt.
Weigh 5gr of dry yeast and pour it into the warm milk. The milk should be warm but not hot. Otherwise it would kill the yeast.

In a large bowl, pour 290gr of white flour and 100gr of oat flour.
Using less white flour makes for better digestion. But if you prefer, you can use only white flour. That would be 390gr in total.
Add 1/4 teaspoon of salt and mix everything together with a spoon.

Make a well in the centre of your flour, then pour in 50gr of sugar and the milk/yeast mixture.

Mix everything with the dough hook until the dough starts to come together.
At this point, add 50gr of butter (plant-based butter) and continue mixing with the dough hook for 10 minutes at medium speed.

After a good 10 minutes, shape your dough into a ball using a dough scraper.
Then cover your bowl with a damp cloth. Let the dough rise for 1h30 at room temperature.

Once the dough has risen well, divide it as follows:
12x 28gr for the paws and ears
6x 50gr for the bodies
6x 30gr for the heads
Get yourself a perforated baking tray and a perforated mat.

For one bunny, you will need:
1 ball of 50gr (the body)
1 ball of 30gr (the head)
2 balls of 28gr (2 paws and the 2 ears at 14gr each)
Shape the body by rolling the piece of dough into a ball, making sure the seam is on the bottom.
Do the same with the head.

Then cut a 28gr ball in half and shape two nice little balls for the paws.

Last step: the ears. I started by rolling a log shape and tapering it on each side.
Finally, cut this shape in half.
Assemble your bunnies and place the ears however you like. One ear down, one up, both up... it's up to you. :o)

Using a pair of scissors, cut two arms into your bunnies. Don't hesitate to cut enough dough so the arms are thick enough to hold their shape during baking.

Place the carrot in the centre of the bunny and wrap its two arms around the carrot. ;o)
Press the two arms firmly against each other so they don't come apart during baking.

Cover your bunnies with a cloth for 20 minutes to let them rise a second time.
In the meantime, preheat your oven to 160°C, fan-assisted.
Once the oven is preheated, brush your bunnies with a beaten egg (plant-based milk).
Then bake your bunnies for 20 minutes.
And here's what they look like after 20 minutes of baking.
Let them cool on the tray.

Once the bunnies have cooled down, let's customise them a little.
For this I used a black food pen to draw cute little faces on my bunnies. ;o)

And here's the result!
Little bunnies for Easter or just for the spring season. ;o)
I hope you'll try out my little bunnies. It's a fun idea for an afternoon with your kids.
Have a lovely Sunday, foodies!
Karin
