How to stencil perfect flower patterns
- With royal icing: hold the stencil in place on the fondant and spread a thin layer of icing over it with a palette knife to create a raised lace pattern.
- With an airbrush: spray food colouring in several fine layers rather than all at once so nothing runs under the stencil.
- With icing sugar or cocoa: on chocolate cakes, tarts and cappuccino, simply sift through the stencil.
Frequently asked questions
Can I use an airbrush stencil without an airbrush?
Yes, many designs can also be transferred with icing sugar, cocoa or a thin layer of royal icing. For very fine details, however, an airbrush gives the cleanest result.
How do I stop the stencil from slipping?
Hold the stencil with one hand or secure the edge with pins and work quickly. On freshly covered fondant the stencil sticks particularly well.
How do I clean my cake stencils?
Rinse the stencils right after use with warm water and a little mild washing-up liquid and let them dry lying flat so they stay level for a long time.
