How to make perfect ravioli
- Thin dough: roll the pasta dough thinly so the ravioli stay tender after cooking.
- Not too much filling: a small spoonful per raviolo is enough, otherwise the edges will not seal neatly.
- Press the edges well: brush the dough around the filling with a little water and press out the air.
- Lightly flour wooden moulds: this way the dough comes out of the mould easily after rolling over it.

How do I clean a wooden ravioli mould?
Brush out leftover dough while dry and let the beech wood air-dry. Do not soak the mould in water or put it in the dishwasher.
Can I make ravioli in advance?
Yes, fresh ravioli freeze well. Lay them out individually on a floured tray first so they do not stick together.
