With a pasta machine, fresh pasta turns out just like in Italy, from wafer-thin lasagne sheets to tagliatelle. In this category you will find Marcato pasta machines: the Atlas 150 with attachments, which comes with four cutting rollers and ravioli rollers, the Atlas 180 for wider sheets of dough, and the Atlas 150 with motor and 10 settings, which does the cranking for you. All three models clamp to the worktop and roll the dough in 10 thickness settings. If you love spaghetti alla chitarra, choose the large or small pasta chitarra, whose taut strings cut the dough into square noodles.
Fresh pasta cooks in 2 to 4 minutes depending on thickness, dried pasta in 4 to 6 minutes. If you make pasta in advance, hang it up to dry and then pack it well.
When you often make larger quantities: the motor does the cranking and you have both hands free to guide the dough.
