Whether you are working with sugar paste, buttercream or ganache, you will find the right tool for every layer here.
Smoothers for fondant and buttercream
The Icing smoother is the classic choice for fondant. Its flat plastic base spreads the pressure evenly and works out air bubbles and small bumps. The Creme smoother suits softer pastes, while the 3-angle fondant smoother also reaches the point where the top meets the side. For buttercream and ganache, the stainless steel cake scrapers N1 and N2 and the 22.8 cm Icing Smoother are ideal.
- For fondant: Icing smoother, Creme smoother and 3-angle fondant smoother
- For buttercream: stainless steel scrapers N1 and N2, Icing Smoother 22.8 cm
- For edges: adjustable sharp-edge tool
- For texture: 3-in-1 wave decorating comb set for ridges and waves
Creating sharp edges
Once the cake is covered, smooth the top first and then the sides, working from top to bottom. For a crisp edge, use two smoothers at once: one lies flat on the top while the other pushes gently upwards along the side. The adjustable sharp-edge tool makes this step easier because it holds a perfect right angle for you. A well-chilled layer of ganache beneath the fondant adds extra stability. Suitable cake boards are available in our Cake circles & entremet bases category.
Care and tips
Always work with clean, dry smoothers and dust them with a little starch if the paste starts to stick. After use, wash them in warm water with a soft cloth, as every scratch would show up in the fondant. Rolling pins and other basic tools are waiting in our Fondant essentials category.
Your cake will have the smooth, precise finish that you thought only pastry chefs could achieve.
