Prepare the dough cold and chill briefly, lightly flour the work surface, rolling pin and mold. Roll out the dough as desired: approx. 0.5 cm for softer biscuits or thinner for crispier results. Cut out shapes, place on the tray and bake in a preheated oven at 200 °C until golden brown. If the dough becomes warm and sticky, cool again briefly - cold butter gives dough stability. The letter Y cutter is also suitable for rolling out and cutting out fondant or marzipan: roll out the mixture with a little baking starch, cut out and decorate as desired with royal icing, sugar icing or chocolate.
