Strawberry and rhubarb: the stars of spring
When the days grow milder, strawberries and rhubarb arrive, a combination we simply love. That is why you will find many recipes with these flavours in this category. The Strawberry-Rhubarb Tart and the Rhubarb Tart are among your favourites, as are the Strawberry-Rhubarb Entremets and the Strawberry-Rhubarb Dessert.
For an afternoon treat, try the Mini Plumcake with Strawberries and Rhubarb with Crunchy Crumble. Classics such as the Fraisier, the Strawberry Roulade or the Strawberry-pistachio tartlets are perfect for family celebrations, and the Strawberry, Mint and Lemon Tiramisu is a refreshing dessert that needs no oven.
Tips for fresh and fruity desserts
- Use ripe, fragrant fruit: the flavour of a spring dessert depends above all on its fruit.
- Rhubarb is quite acidic, so balance it with a creamy element such as vanilla cream or white chocolate.
- Add fresh fruit only shortly before serving so that it stays shiny and does not release too much juice.
- Edible flowers or sugar paste roses give your creations a romantic spring look.
Spring is also a lovely time for elegant cakes such as the Charlotte Royale with Berries, the Elderflower and Red Berry Tart or the Lemon Poppy Seed Kouglof. If you prefer savoury flavours, the Asparagus Eclairs and the Wild Garlic Roulade make the most of seasonal vegetables and herbs.
