How to make edible lace with a lace mat
- Spread thinly: spread the lace mix into the recesses with a palette knife and scrape off the excess cleanly so the outlines stay fine.
- Let it dry well: allow the mix to dry completely before releasing the lace, otherwise the fine parts will tear.
- Release gently: turn the mat over with the lace facing down and slowly peel the mat away instead of pulling the lace out.
Frequently asked questions
Which mix do I need for edible lace?
Use a lace paste or a ready-made mix for edible lace. Prepare it according to the packaging, spread it into the mat and let it dry.
How long does the lace need to dry?
That depends on the mix and the humidity. Some mixes dry in the air, others in the oven at a low temperature. Follow the instructions on the packaging.
How do I attach the lace border to the cake?
Brush the fondant very lightly with water or edible glue and apply the border. On buttercream the lace usually sticks without any extra help.
