Round and dome pralines are the classics of chocolate making and the ideal starting point for making your own shell bonbons. In this category you will find praline moulds, most of them made of polycarbonate, with domes in various sizes (12, 21, 24 or 28 pralines), ribbed domes, double domes and modern half-round shapes. There are also shapes such as cone, cap, cream swirl, thimble, plateau, circle, rotation, tunnel and ribbed tunnel, a medium cylinder, the PRO «Cap» Rosette praline mould, a half-sphere praline set for 24 pralines, the «Tartufino» chocolate mould and a praline chocolate mould from Silikomart.

How to make shiny pralines

  • Polycarbonate for a high gloss: the rigid, smooth surface of a polycarbonate chocolate mould creates the typical shine. Silicone moulds are more flexible but give a more matt finish.
  • Temper the chocolate: only properly tempered chocolate contracts as it cools, releases cleanly from the mould and shines.
  • Cast the shells: fill the cavities with chocolate, tap the mould, turn it upside down and let the excess run out. Once set, scrape the edges clean with a scraper.
  • Fill and seal: only pipe in ganache or praliné once it has cooled to about room temperature, leaving a few millimetres free at the top, then seal with tempered chocolate.
  • Add colour: apply coloured cocoa butter to the cavities with a brush, your finger or an airbrush before casting the chocolate.

Frequently asked questions

Why are my pralines not shiny?

Usually the chocolate was not tempered correctly or there are residues in the mould. Polish the clean cavities with cotton wool before casting and work in a cool room.

How do I clean a polycarbonate praline mould?

Use warm water and a little mild washing-up liquid, no abrasive cleaners or scouring sponges, and dry it thoroughly. Otherwise every scratch shows on every praline.

Which mould is best for beginners?

Simple half spheres and domes are easy to cast and unmould. For truffles and round pralines, also take a look at Half-sphere chocolate moulds.
