With a ready-made mirror glaze you can achieve a flawless high-gloss finish on cakes and entremets without complicated mixing. This category offers ready-to-use mirror glazes in gold, red, purple and iridescent red, a neutral mirror glaze for colouring yourself and chocolate glazes: the chocolate mirror glaze in a 1 kg tub and brown chocolate-flavoured mirror coatings in a 300 g pot. Neutral cake glaze for fruit tarts and Swiss rolls completes the range. Mirror glazes are ideal for mousse cakes, entremets, cheesecakes, petits fours and the Christmas yule log, giving them a professional finish in just a few minutes.

How to get the mirror shine

  • Frozen base: pour the glaze over the well-frozen cake so it sets straight away into a smooth layer. Cakes coated very smoothly with ganache or buttercream also work, as long as they are frozen through.
  • Check the temperature: the coloured and neutral glazes and the chocolate mirror glaze are warmed in a bain-marie to 50 °C and poured at 45 °C, which is warmer than most homemade glazes, so follow the instructions on the pot. The brown coating, by contrast, can be used cold or slightly warmed. A thermometer is worth it, as the shine depends on the right temperature.
  • No air bubbles: stir without beating in air and strain the glaze through a fine sieve if needed; the dessert sits on a rack.
  • Colour and marbling: tint neutral mirror glaze with water-soluble gel colour, or let two colours run together for a marbled effect.

Frequently asked questions

How much cake does a 300 g pot of mirror glaze cover?

The gold and iridescent red glazes are enough for 6 small individual desserts or a yule log 25 to 30 cm long; dilute them first with 20 g of water. The brown chocolate-flavoured mirror coating covers a cake 16 cm in diameter.

When is neutral cake glaze better than mirror glaze?

For fruit tarts and Swiss rolls: the cake glaze is not heated but brushed on thinly at the end. It adds shine, stops apples or bananas from browning and even works on canapés.
