Neutral mirror glaze, 1 kg
Mirror icing is often used when cake decorating has to be done quickly. A single or multi-colored and beautifully shiny coating gives your cakes that certain wow factor, but is an absolute eye-catcher despite its simple appearance. To ensure that the mirror glaze has a smooth surface to reflect on, the smooth surface of frozen mousse cakes is the best base for a mirror glaze. Of course, cakes coated with ganache or buttercream can also be used as a base for the mirror glaze. To do this, the cakes must be very smooth and perfectly coated. It is important that the base is frozen so that the Mirror Glaze can set immediately, becomes beautifully smooth and has an enchanting shine. You can color the mirror glaze as desired using food coloring. We recommend using water-soluble gel colors for this. Application: This ready-made mirror glaze only needs to be heated before use and you can then frost your frozen mousse cakes or cakes coated with ganache/buttercream. To do this, place the Mirror Glaze and its container in a bain-marie and heat the glaze to 50 °C. In the meantime, take your dessert out of the freezer and place it on a wire rack. Once the mirror glaze has reached the required temperature, remove it from the water bath and stir the glaze until it cools down to 45 °C. When stirring, make sure that you do not add any air to the glaze, as this can lead to air bubbles in the end result. You can also pass the mirror glaze through a sieve before applying it to avoid lumps or bubbles. Now it has to be done quickly. As soon as the glaze has cooled, it can be applied evenly to the prepared dessert. It is important to note the melting temperature and to use a thermometer when making the glaze, as the gloss of the glaze depends to a large extent on the correct use of the product. Storage and shelf life: The icing can be kept sealed and wrapped in cling film in the fridge for up to a week and in the freezer for several months.
