Silicone eclair moulds give you eclairs and elongated desserts in exactly the same shape every time: as a frozen mousse eclair, as an insert for choux eclairs or as a baked pastry. There are also perforated eclair baking mats with pre-drawn outlines in regular and mini size, silicone stencils and chocolate decoration moulds for eclair toppers, as well as silicone moulds for leaf- and heart-shaped tuiles. - Baked eclairs: the micro-perforated AirPlus mould in silicone and fibreglass or the perforated mats, on which choux pastry rises evenly.
- Bars and finger desserts: bar moulds, Fingers 75 and chocolate stick moulds for muesli bars, mousse or chocolate.
- Ladyfingers: ladyfinger and savoiardo moulds for tiramisu and charlotte.

Frequently asked questions about eclair moulds
How long is a classic eclair?
A classic eclair is 12 to 14 cm long; mini eclairs measure about 7 to 8 cm. Our moulds range from 8 x 3 cm for mini eclairs to 13 x 3 cm, covering both sizes. The AirPlus mould has 16 cavities 12.5 cm long.
Can I pipe choux pastry into the silicone mould?
For baked choux pastry the perforated AirPlus mould and the perforated mats work best: heat and steam circulate and the eclairs rise evenly. Closed eclair moulds are ideal for mousses, creams and inserts.
