A stainless steel bench scraper is one of the most versatile tools in bakery and chocolate work: it divides bread dough into even pieces, clears flour and dough from the work surface and lifts chocolate cleanly off moulds and marble slabs. This category offers the stainless steel dough cutter, the large stainless steel dough cutter, the rigid stainless steel scraper (Metallhorn) and the professional metal scraper, 18 cm wide.

Unlike flexible plastic dough cards, these tools do not bend. Their straight, rigid edge cuts cleanly through dough and leaves a flat, glossy surface when you scrape couverture.

Tips for dough, chocolate and cakes

  • Bread and plaited loaves: cut the dough with a firm, straight push rather than tearing it, so the gluten structure stays intact and the pieces rise evenly.
  • Tabling: spread melted couverture on a cool marble or granite slab and keep gathering it back to the centre with the rigid scraper until it thickens slightly.
  • Praline moulds: after filling, scrape the excess chocolate off the mould in one stroke with the professional scraper and clean the edges.
  • Cakes: held upright, the steel edge also smooths buttercream around the side of a cake.

Frequently asked questions about bench scrapers

Why use a metal bench scraper instead of a plastic one?

Metal is rigid and has a straight, stable edge, so you can portion firm dough accurately, clean the work surface thoroughly and work neatly when tabling chocolate. For scraping out round bowls, a flexible plastic scraper is the better choice.

How do I clean the rigid scraper after tabling?

Let the chocolate residue set briefly, scrape it off, then wash the tool in warm water and dry it well. The professional scraper is rust-free and dishwasher-safe.

Flexible scrapers, palette knives and cake smoothers are waiting in the Spatulas & scrapers category. For pralines, bars and chocolate desserts, find ideas in our chocolate recipes.
