Chocolate mold bunny in a basket

With this dimensionally stable mold, you can create a detailed chocolate figure with a smooth, shiny surface. What is it suitable for? For a bunny with colorful accents - ideal as an elegant gift or for festive decoration. You work with the chocolate mold in the same way as in a confectionery: temper high-quality couverture in three stages (melt, cool, reheat) and check the processing temperature with a chocolate thermometer. Prepare the mold carefully: clean with lukewarm water and mild detergent without lye or rinse aid, rinse thoroughly, dry completely and polish with lint-free absorbent cotton; then only touch the edges and make sure it is at room temperature. How is it used? First paint fine details such as pupils with dark, tempered couverture in the cornet, larger areas with a brush; white couverture can be colored with fat-soluble powder paint. Allow each layer to dry briefly and turn the mold over from time to time. Then brush the entire mold with the main couverture, avoid air bubbles and clean the surface with a metal horn. Place the mold halves on top of each other; the magnets will hold them securely together. Fill completely, tap out air bubbles with a chocolate hammer or spatula handle, turn the mold and allow excess to run out; repeat if the wall is too thin. Wipe off edges, chill for 5-10 minutes, place base on couverture baking paper and chill for a further 5-10 minutes. Remove the clamps and chill for around 30 minutes until the figure comes loose; carefully unmold with a spatula. The chocolate mold produces clean results that can then be packaged in style.
