Fruit powder adds intense, natural fruit flavour and colour to buttercream, macarons, ganache, batters and ice cream – without extra liquid. Our freeze-dried fruit powders come in raspberry, strawberry, blackberry, cherry, cranberry, apricot, peach, mango, passion fruit and yuzu. Just a small amount is enough to flavour and colour a cream; dusted on top, the powder gives a lovely pop of colour. Natural flavour powders in strawberry, raspberry, banana, lemon and coconut enhance creams, mousses and cookie dough, while freeze-dried raspberry and strawberry pieces are perfect for decorating.

Matcha green tea tints Swiss rolls, macarons and cheesecakes a delicate green and adds a fine, slightly grassy note. It pairs especially well with white chocolate and red berries.

Tips for fruit powder and matcha

  • Mix into chocolate: freeze-dried fruit contains hardly any moisture, so you can stir it into tempered couverture without it seizing – ideal for fruity bars and pralines.
  • Colour macarons naturally: add a little powder to the shells or the filling, so both colour and flavour come from the fruit.
  • Sift first: sift fruit powder and matcha before stirring them in to avoid lumps in your cream or batter.
  • Seal well: powder attracts moisture, so close the pack carefully after each use.

Frequently asked questions about fruit powder

Can I replace fresh fruit with fruit powder?

In fillings and creams, yes – or combine the two: the powder boosts the flavour of fresh berries and spreads the colour evenly without making the mixture runny.

Does every flavour powder add colour?

No. Fruit powder brings its natural colour, whereas the coconut flavour powder, for example, only adds taste and will not tint your cream.
