Flower, rose and shell silicone moulds turn simple batter into small works of art. In this category you will find silicone moulds by Pavoni and Martellato for 20 or 24 rose cakes, rose bouquets with 12 cavities, flowers with 6 cavities, daisies of Ø 7 cm and flowers of Ø 8 cm, the Medusa flower, Calipso shells, Coco sea urchins and a shell mould with 15 cavities that is also ideal for madeleines. Whether for Mother's Day, a wedding or a garden party, these moulds bring blossoms and seaside motifs to the cake table.

Tips for delicate little cakes

  • Fill correctly: only fill the cavities two thirds full with cake or muffin batter so the fine petals stay visible and nothing overflows.
  • Unmould patiently: let the cakes cool briefly after baking, then carefully push them out of the mould.
  • Highlight the details: dusted with icing sugar or coated with a thin glaze, rose petals and shell ridges really stand out.
  • Mix and match: rose cakes, daisies and shells arranged together on a tiered stand make a varied cake buffet, for example for a Mother's Day brunch.

Frequently asked questions

Can the flower moulds also be used for mousse and ice cream?

Yes. The Pavoni Flowers Ø 8 cm mould can be used from -40 °C to +250 °C and is suitable for mousse, ice cream and sorbet as well as muffins. Freeze cold mixtures for at least 4 hours, then let mousse thaw in the fridge.

How do madeleines get their typical hump in the shell mould?

Rest the batter in the fridge for a few hours before baking and bake the madeleines in a hot oven. The temperature contrast makes the batter rise in the centre.
