Square and rectangular cake rings and frames are ideal for entremets, slices and mousse creations that you want to cut into even pieces. The square Martellato rings are 5 cm tall and range from 14 x 14 cm to 30 x 30 cm in 2 cm steps. They are joined by two rectangular professional stainless steel frames by Pavoni, one large and one small, each made of two parts.

Baking, layering and cutting in squares

  • Bottomless frames: set the frame on a board or baking mat, pour in the mixture and let it set completely before removing the frame and cutting the pieces. This makes even portions much easier.
  • Sponge in the ring: you can bake the base directly in the square ring too: place it on baking paper, do not overfill, let it cool and loosen the edge with a knife.
  • Sharp corners: acetate film from our Rhodoid category gives you clean edges and corners.
  • Adjustable: the adjustable rectangular frame, with variable length and width, is in our Adjustable cake rings & frames category.

Questions about square cake rings

What is the second part of the professional frame for?

The stainless steel frame sets the rectangular shape, while the second insert rests on the dough as a weight during blind baking. Puff pastry, shortcrust or filo pastry stay flat and do not blister. You then remove the top part and finish baking until golden, for example for puff pastry slices or mille-feuille.

Square cake ring or tart ring: what is the difference?

The rings in this category are 5 cm tall and designed for cakes, mousses and slices. Square and rectangular tart rings and frames are much lower at 2 or 3.5 cm and suit tarts and quiches; you will also find them in our Tart ring category.

Round shapes are in our Round cake rings category, so you always have the right frame for every cake.
