With chocolate stamps and stencils you can make chocolate decorations that are all the same size and thickness, ideal for cakes, desserts, éclairs and pralines. The range includes chocolate stamps with the motifs Love, Happy Birthday, coffee bean, cocoa flower and vanilla flower, silicone stamps and stamp sets for pralines, 8-piece stamps for leaves, feathers and petals, and around twenty silicone stencils: round, square, rectangle, heart, star, drop, éclair, flower, butterfly, maple leaf and splash.
How to use silicone stencils
- Lay the silicone stencil flat on an acetate sheet or a silicone mat.
- Pour on tempered chocolate and spread it thinly and evenly over the cut-outs with an angled palette knife. Scrape off the excess.
- Let the chocolate set slightly, then carefully lift off the stencil before the chocolate is completely firm.
- Leave to crystallise fully and peel the shapes off the sheet.
This gives you uniform chocolate discs, for example perfectly fitting toppers for éclairs, stars for Christmas desserts or hearts for Valentine’s Day. Instead of chocolate, you can also spread tuile paste and bake it.
Chocolate stamps for motifs and lettering
A chocolate stamp imprints motifs and lettering in chocolate, such as Happy Birthday for a birthday cake or a cocoa flower as an elegant finishing touch on pralines. The silicone stamps for pralines give your chocolates a uniform relief. The 8-piece stamps for leaves, feathers and petals are ideal for natural-looking decorations that you can assemble into flowers or place individually on tartlets.
Frequently asked questions about chocolate stamps and stencils
Why does the chocolate need to be tempered?
Only tempered chocolate sets glossy and crisp and releases cleanly from the sheet and the stencil.
How thick should I spread the chocolate?
As thick as the stencil. Scrape off the excess flush with the palette knife.
How do I clean silicone stencils?
With warm water and a little washing-up liquid, then leave them to dry thoroughly.
For colourful patterns, combine the stencils with transfer sheets. Temper your couverture in a tempering machine and spread it with our palette knives.
