For occasional baking and experimenting, the 500 g pack of couverture drops is enough. If you regularly make pralines, chocolate-dipped Christmas cookies or large cakes, the 2.5 kg Lindt packs are the better fit.
Can I add the drops straight into dough?
Yes, like chocolate chunks in cookie or muffin dough. In the oven, though, they melt more than bake-stable chocolate chips and spread a little.
