How to use cake stencils
- Dusting: the easiest way is to dust snow sugar or icing sugar over the stencil to get your designs in white. On dark chocolate glaze this looks especially elegant.
- Airbrush: with an airbrush you spray full-colour designs in seconds; several colours layered on top of each other create beautiful gradients. Find kits and colours in Food airbrush.
- Paint with sponge or brush: for a colourful result you can also dab on Metallic food colours with a sponge or brush. Be careful not to push the paint under the stencil. This technique is trickier – we advise against it with very detailed stencils.
- Royal icing: a little more technical, but with a raised result, is royal icing, for example made from the royal icing mix. Colour it as you wish before use with a Food coloring gel and spread it thinly over the stencil with a spatula.
What to look for when buying
Measure your cake first: the stencil should be a little larger than the surface so the whole design fits; the Party Mix cake stencil set, for example, measures Ø 20.5 cm. For side patterns, flexible silicone stencils are ideal; for tops and cookies, classic stencils. The finer the design, the better airbrush or icing sugar work; large, clear shapes such as numbers or hearts also succeed with royal icing. FAQ about cake stencils
How do I stop the stencil from slipping?
Place the stencil on a well-chilled, firm surface such as fondant or set ganache and hold it at the edge with two fingers. Then lift it straight up so nothing smudges.
Can I use stencils on cookies?
Yes. On cookies with a dried base layer of royal icing, spray with the airbrush or spread a second thin layer of icing over the stencil.
How do I clean stencils?
Rinse them straight after use with warm water and a little washing-up liquid and let them dry flat so they do not warp.
