Flour the work surface, hands, rolling pin and shape, roll out the dough and cut out the figures. When rolled out thinly, the biscuits will be crispy; at approx. 0.5 cm they will remain softer. Place the pieces on a baking tray lined with baking paper and bake in a preheated oven at 200 °C until golden brown. Cold butter is ideal for kneading dough; if the dough becomes warm and sticky, cool it briefly.For the decoration, mix royal icing, color it as desired and apply it to the cooled pastries. Sprinkles adhere particularly well.
