The polycarbonate chocolate mold offers space for two large hearts and ensures an even, clean result. How is it used? Chop up the couverture and melt a good two thirds of it in a bain-marie over a low heat, stirring constantly until it is shiny and liquid. Add the rest of the unmelted couverture and stir occasionally to dissolve. Make sure that no water gets into the mixture - otherwise the chocolate will become crumbly and lumpy. Cool the melted mixture and reheat it later (tempering). Pour the liquid chocolate evenly into the mold and tap it gently against the table to loosen any air pockets. What is the mold suitable for?
