A well-glazed fruit tart requires the right glaze — one that flows evenly, enhances the colour of red fruits, and presents the fruit exactly as it should look: rich, glossy, and appetising. This red Cake glaze delivers precisely that. Reliable, easy to use, and with results that impress.
From powder to showpiece — here's how it's done
Place the contents of one sachet (12 g) together with 250 ml of cold water and two teaspoons of sugar into a small saucepan. Stir well, bring to the boil while stirring constantly, then remove from the heat. Allow the red Cake glaze to cool for approximately two minutes until it reaches a working temperature of approx. 60 to 70 degrees. At this temperature it flows smoothly and evenly without damaging the fruit. Pour the cooled red Cake glaze swiftly from the centre of the cake outwards. For a seamless result, slowly rotate the cake on a Turntable as you do so. If needed, a Dough scraper or an angled Spreading palette can be used to touch up the red Cake glaze without displacing the fruit. After approx. 30 minutes at room temperature or in the refrigerator, it is fully set and ready to slice.
Less is more — tips for the best result
Those who prefer a thicker glaze should reduce the amount of water to 220 ml. With delicate fruit such as raspberries or sliced strawberries, allow the red Cake glaze to cool a little longer before applying. Thaw frozen fruit completely and pat it dry before glazing, so that no moisture clouds the glaze. The red Cake glaze is completely flavour-neutral and does not affect the taste of the baked goods. It holds the fruit firmly in place, keeps the fruit fresh, and prevents cut fruit from discolouring — even if the cake has been standing for several hours. Particularly suitable for strawberry cakes, strawberry tartlets, raspberry tarts, mixed berry cakes, and flans with strawberries, raspberries, or red currants.
