With white couverture 36%, you can achieve a beautiful gloss and the typical crunch when tempered correctly. How is it used? Melt, cool and reheat - the three tempering stages ensure optimum processing; the exact temperatures vary depending on the couverture, a chocolate thermometer helps you to check. It is suitable for depositing pralines and chocolate bars, for elegant decorations on patisserie and desserts and as a glaze for cakes and gateaux; tempering is not necessary for fillings such as ganache (boiled cream, poured over couverture). Prepare chocolate molds carefully: rinse with lukewarm water and mild detergent without lye or rinse aid, wash off any residue, dry well and polish with non-fraying absorbent cotton; hold molds by the edges only and bring to room temperature. Knock out air bubbles with a chocolate hammer to create even walls.
