With ready-molded star-shaped hollow shapes, festive patisserie can be created in no time at all, ideal when time is short. With the white praline shells, you can create individual star-shaped pralines to enjoy or give as gifts in no time at all. How is it used? Prepare a filling to your taste, for example a white ganache made from 140 g white couverture, 70 g cream, 10 g glucose, 5 g sorbitol and 5 g butter. Pour the hot cream mixture over the couverture, leave to stand briefly and stir with a whisk to form a homogeneous mass; refine with limoncello, lemon paste or fruit puree as desired. Pour in the filling at a maximum temperature of 26 degrees using a piping bag to about 3 mm below the rim, leave to stand at room temperature for 30 minutes, seal with couverture, tap lightly and decorate with freeze-dried fruit, nuts or flowers as desired. Then chill the molds for approx. 30 minutes and turn them out onto a smooth surface so that the chocolates come out easily. The white star-shaped praline shells are the practical basis for creative gifts, festive dessert platters and indulgent moments.
