Always paint the mold from the outside to the inside and allow intermediate layers to set slightly Once the decoration is finished, spread the entire mold with couverture, tap out any air bubbles, remove any excess, stick the halves together and secure with clips. Then fill completely, tap again, allow excess couverture to run out and repeat if necessary. Chill briefly (2-5 minutes). Spread the base on baking paper, press the chilled mold into it and chill for 10-15 minutes, remove the clips, chill again and carefully unmold. Decorate with fondant or sugar decorations as desired. A little yellow for the beak and white for the eyes will make the figure stand out particularly well - the chocolate duckling mold is the perfect eye-catcher for an Easter nest.
