Finely balanced milk couverture with a 38% cocoa content made from beans from the island of Grenada: delicate notes of milk caramel, almonds and blossom honey, rounded off with a hint of vanilla. What is it suitable for? For depositing chocolates and bars, for elegant decorations, glazing cakes and desserts and for patisserie borders. How is it used? Temper the couverture in three steps - melt, cool, reheat - until the optimum processing temperature is reached; a chocolate thermometer helps you to check this. The couverture does not need to be tempered for ganache fillings: Bring the cream to the boil, pour over the couverture and stir into a creamy mixture.
