Temper the couverture in three stages (melt, cool, reheat) and check the processing temperature with a chocolate thermometer; only use high-quality couverture for this. Clean the mold with lukewarm water and a mild, dishwasher-free detergent, dry and polish it thoroughly and then only touch the edges. Fine details of the Easter bunny can be highlighted with a cornet and dark couverture, larger areas with a brush; white couverture can be colored as desired with fat-soluble powder paint. Then brush the entire mold with the desired couverture, release any air bubbles by tapping lightly with the chocolate hammer and then pour out the mold completely with a ladle. Allow any excess chocolate to run out and repeat the process if necessary for a thicker wall. Clean the edges cleanly with the metal horn and cool the mold for 5-10 minutes.
