What are they suitable for? For creamy ganaches, soft caramel or fine fillings with e.g. Grand Mariner. How is it used? Fill the filling (max. 27 °C) with a piping bag to approx. 3 mm below the rim, leave to stand at room temperature for 30 minutes, seal with tempered couverture and decorate as desired; then chill for 30 minutes and turn out the mold. A milk chocolate ganache made from 140 g milk couverture, 70 g cream, 10 g glucose, 5 g sorbitol and 5 g butter is suitable as a base. Refine as desired, for example with hazelnut cream or a soft caramel that fills half of the cavities.
