A staple ingredient with exceptional versatility
Baking soda has been one of the most tried-and-tested basic ingredients in kitchens and bakeries for centuries. Behind this fine, white powder lies pure sodium bicarbonate, which develops its special effect when combined with an acid. This produces carbon dioxide, which naturally leavens doughs and gives them a fine, airy structure. At the same time, baking soda can neutralise excess acid, making it far more versatile than simply a baking agent. RUF baking soda consists of 100% pure sodium bicarbonate, is gluten-free, vegan, and free from additives. It is suitable for leavening acid-containing doughs, stabilising beaten egg whites, balancing the flavour of fruit preparations, and softening water for more aromatic coffee and tea. Thanks to its high purity and consistent quality, it has been an indispensable staple for home bakers and professionals alike for generations. Baking soda and Baking powder are often confused with one another, but they differ in how they work. While Baking powder already contains an acidifying agent and therefore acts independently of the other ingredients, pure baking soda requires an acid such as buttermilk, yoghurt, lemon juice, vinegar, or natural Cocoa powder. Only through this reaction is carbon dioxide produced, which aerates the dough evenly and creates a fine, airy crumb. At the same time, excess acid is neutralised and the flavour becomes more harmonious. To achieve the best results, baking soda should always be measured carefully, as too large a quantity can cause a slightly soapy aftertaste.
Application and versatile uses
For optimal baking results, a useful guideline is one teaspoon (approx. 5 g) of baking soda per 500 g of flour, combined with approximately six tablespoons of lemon juice or vinegar, or a comparable amount of another acidic ingredient. The baking soda is mixed with the dry ingredients, and the acid is stirred into the liquid components. The leavening reaction only begins when the two are combined, which is why the dough should be baked as quickly as possible afterwards. But baking soda can do far more than leaven doughs. A small pinch added to egg whites produces particularly stable beaten egg whites. In compote, jam, and other fruit preparations, just half a teaspoon per kilogram of fruit is enough to bind excess fruit acid and create a well-balanced flavour. Baking soda is also excellent for cleaning fruit and vegetables — one to two teaspoons per litre of water is sufficient. For coffee or tea, a knife tip per litre of water is enough to reduce water hardness and allow the natural aroma of the drinks to come through more effectively. To keep RUF baking soda at full potency, it should be stored in a dry place, tightly sealed, and at room temperature. Since sodium bicarbonate absorbs moisture from the air, it is advisable to close the packaging carefully after opening and to use the contents as soon as possible.
