How to add shine to macarons
Dry dusting: brush a little powder onto the cooled shells with a soft, dry brush for a subtle shimmer. Painting: for an intense shine, mix the powder with a few drops of high-proof alcohol to make a paint, then paint or dab on patterns; the alcohol evaporates quickly. Spraying: spray pump sprays and glitter sprays from a short distance onto dry shells, ideally over baking paper. Gold leaf: pick it up with tweezers or a dry brush and place it on a very lightly moistened spot. Always work on completely cooled, dry shells and only fill the macarons once the colour has set. Often a golden rim or a fine splatter is enough to turn simple macarons into show-stoppers for weddings, Christmas or birthdays.
What to look for when buying
Read the product name carefully: items labelled «edible», such as the edible glitter powder or the edible gold and silver leaves, are intended for eating. For surface colours and decorating powders, check the packaging to see whether they are edible or for decoration only. Small sizes are enough for a few accents; if you regularly decorate whole batches of macarons or cakes, choose the 25 g metallic powder colours. Pump sprays are ideal for large areas, brush and powder for fine details.
Frequently asked questions about glitter and lustre dust
What is the difference between glitter and metallic powder colour?
Glitter contains coarser particles that visibly sparkle. Metallic powder colour is finer and creates an even, metallic sheen – ideal for elegant macarons.
Can I mix lustre dust into the macaron batter?
Glitter and metallic powders look best on the surface. So colour the batter with regular food colouring and apply the shine after baking onto the cooled shells.
How much powder do I need per tray?
Very little: the tip of a knife is enough for many shells. Tap off any excess over a sheet of paper and pour it back into the pot.
