Flower paste, also called gum paste, is a sugar paste used to make sugar flowers such as roses, peonies and many other blossoms. It can be rolled out much more thinly than fondant, dries quickly and then holds its shape. This lets you create wafer-thin petals that look very close to real flowers. We offer white flower paste in 200 g, 250 g and 1 kg and white gum paste in 1 kg. To go with it, we stock clear edible glue in a tube or brush pen and starch for rolling out, fine in 200 g or potato starch in 1 kg. For larger projects or lots of flowers, the 1 kg pack is good value.

Tips for working with flower paste

  • Work in portions: take only as much paste as you need and keep the rest well wrapped, as flower paste dries quickly in the air.
  • Roll out with starch: a thin layer of starch stops it sticking to the work surface and the cutter.
  • Colour it: white flower paste takes on any shade with a little gel or powder colour.
  • Glue instead of water: edible glue joins petals neatly without softening the fine paste.

Frequently asked questions about flower paste

What is the difference between flower paste and fondant?

Flower paste is more elastic, rolls out much more thinly and hardens as it dries. Fondant stays softer and is mainly used for covering cakes. That is why flower paste is the first choice for delicate flowers, leaves and ruffles.

How should I store opened flower paste?

Wrap the paste airtight in cling film and keep it in a closed container at room temperature. Knead it briefly before using it again.
