Silicone stencils for dessert decorations let you create fine plaques and garnishes for éclairs, cakes, cupcakes and dessert plates, all identical in shape and size. Every stencil in this category is made by Martellato, and together they cover a wide range of motifs: circles from Ø 2 cm to Ø 6.25 cm, squares, a rectangle, hearts, stars, drops, maple leaves, flowers, butterflies, a splash and three stencils designed specially for éclairs. Depending on the recipe, you can use them with chocolate, tuile batter or other decorating pastes.
The heart, flower and butterfly come as stencils with three sizes on one mat, ideal for playful plated compositions. The circles with 99 shapes of Ø 2 cm produce lots of small plaques in one go, for example for a whole batch of tartlets.
How to make chocolate plaques with a stencil
- Lay the stencil on a sheet of PVC, spread tempered couverture with an offset spatula and scrape off the excess cleanly.
- Chill briefly, peel off the stencil and chill again: the plaques will then release easily from the sheet.
- For colourful effects, apply coloured cocoa butter to the sheet first; it shows up most vividly under white couverture.
- Runny mixtures, uneven spreading or removing the stencil too early are the most common mistakes, so let the decorations set properly.
Frequently asked questions about silicone dessert stencils
Which stencil covers an éclair along its full length?
For full-length plaques, choose the stencil with 10 shapes of 13.2 x 3.2 cm or the one with 18 shapes of 12.5 x 2.5 cm, depending on the size of your choux pastry fingers. The 36 small éclair decorations of 6 x 1.8 cm add extra accents.
Can the drop stencil be filled with caramel or isomalt?
Yes, the 60-shape drop stencil is heat-resistant: place it on a silicone mat, pour in the mixture and leave it in the stencil until it sets. For cleaning, it goes in the dishwasher.
