Special spices, fine salt and carefully chosen gourmet ingredients give desserts, breads and dishes that extra something. Here you will find tonka beans in 50 g and 250 g packs, nutmeg with mace, ground ginger, matcha green tea, muscovado sugar and black sugar as well as the mango curry, ras el hanout and four-spice blends. For savoury cooking there is dried wild garlic, black garlic, fine red salt, black salt and coarse pretzel salt, and for decorative accents mild pink peppercorns.

Tips for spices in cooking and baking

  • Grate tonka beans finely like nutmeg over creams, ice cream or dough and use them sparingly: the aroma is very intense and grows stronger as it cools.
  • Sift matcha before use so the green powder blends into sponge, icing or lattes without lumps.
  • Sprinkle the pretzel salt over the dough pieces after dipping them in lye solution and before baking. If the grains are too coarse, crush them with the back of a spoon.
  • Pink peppercorns are milder than true pepper and add pretty dots of colour to icing, buttercream or pralines.

Frequently asked questions about spices and gourmet ingredients

How do I use black salt and red salt?

Black salt is used as a finishing salt and adds a striking touch to meat, fish, vegetables and salads. The fine red salt is made from sea water and red clay, which gives it its colour.

What is in the four-spice blend and the ras el hanout?

The four-spice blend combines black pepper, Ceylon cinnamon, nutmeg and cloves and suits terrines, biscuits and cakes. Ras el hanout brings together cloves, green cardamom, allspice, paprika, nutmeg, ginger and rose petals, among others, and is a classic in tagines and couscous.
