Floral and spice flavourings create special taste experiences in macarons, creams, biscuits and pralines. In this category you will find the liquid flavourings orange blossom, rose, violet, bergamot and cinnamon from Decora, plus orange blossom water in 100 ml and organic rose water in 100 ml from Terre Exotique. Freshness comes from spearmint flavouring, peppermint flavouring in 50 g and peppermint flavour paste. For winter bakes there is star anise flavouring in 50 ml, and for unusual creations spruce needle oil and cedarwood oil in 15 g each.

Tips for floral flavourings

  • Rose and violet are intense: dose them drop by drop, or the bake can quickly taste soapy.
  • Rose water goes beautifully with raspberries, lychee and white chocolate.
  • The strength of rose water depends on the flowers and the distillation: add a little, taste and build up gradually.
  • The liquid cinnamon flavouring is strong; around 6 g per 1 kg of mixture is recommended.

Mint, anise and forest notes

The liquid peppermint flavouring keeps its fresh note even when baked and suits ice cream bases, ganache and cupcake batter. Star anise brings a Christmas mood to gingerbread and Swiss meringue. Spruce needle oil tastes earthy and tart with lemony notes, cedarwood oil woody with sweet undertones, exciting for pralines and modern desserts.

Frequently asked questions about floral and spice flavourings

What is the difference between rose water and rose flavouring?

The organic rose water is distilled from fresh damask and centifolia roses and has a delicate scent. The liquid rose flavouring from Decora is based on glycerine and water with natural flavourings, works hot or cold, and the manufacturer recommends up to 10 g per 1 kg of mixture.

What are spruce needle and cedarwood oil used for?

Both oils bring unusual forest notes to ganache, praline fillings and desserts. Small amounts are enough.
