Cookie dough turns out best when the ingredients are weighed precisely, which is why this category brings together scales, measuring jugs and sieves for your preparation. The digital spoon scale weighs small amounts such as baking powder and spices from 0.1 g to 300 g and shows grams or ounces. There are also measuring spoons with long handles, a 1 litre measuring jug and a stackable set of measuring cups, bowls and strainers. For dry ingredients you will find flour sifters, icing sugar dusters, a 24 cm straining sieve and a flat-bottomed strainer, as well as a fine steel grater and the portion scoop for evenly sized cookies.

Tips for precise cookie dough

  • Sift, don't stir: sift flour and icing sugar so the dough stays lump-free and the cookies turn out finer. The sieve with three interchangeable steel meshes – fine, medium and coarse – adapts to flour, ground almonds or cocoa.
  • Same size, same bake: with the portion scoop (4 cm diameter), cookies are the same size and finish baking together. It also fills cupcake cases and shapes small scoops of ice cream.
  • Zest without bitterness: use the steel grater to remove only the coloured part of lemon or orange peel; it also works for tonka beans and ginger.
  • Icing sugar to finish: dusters spread icing sugar or cocoa evenly; the 2-in-1 model with a spring handle sifts and dusts in one go.

Frequently asked questions

Why use a spoon scale if you already own kitchen scales?

For tiny quantities: baking powder, baker's ammonia or gingerbread spice often weigh just a few grams. The spoon scale reads to 0.1 g, where large kitchen scales are often not precise enough.

Which sieve is best for straining fruit purée?

The 24 cm straining sieve: it holds back seeds and skins so you get a smooth purée or coulis, perfect for filling Linzer cookies or Spitzbuben, the Swiss jam-filled shortbread, with homemade jam. It is also useful for dusting with icing sugar.

More tools are in the Cookie baking tools category. If you also shape ice cream with the portion scoop, the ingredients are in the Ingredient for homemade ice cream category, and recipes are waiting in our cookie recipes.
