Dessert rings shape individual portions with clean edges: small mousse cakes, entremets, tiramisu in a ring, verrine-style desserts without the glass, or starters such as tartare, mash and layered salads for buffets and plated menus. Diameters range from Ø 5 to 9 cm and heights from 3.5 to 6 cm, for example Ø 5 cm with a height of 5.5 cm or Ø 7 cm with a height of 3.5 cm. The Städter rings are made of stainless steel, keep their shape and are dishwasher safe; you will also find dessert rings by Patisse.

6 cm or 8 cm dessert ring? How to choose

What matters is portion size and height; both measurements are given for every product.

  • Low rings of 3.5 cm suit tartlets with a thin layer, tartare or a neat mound of risotto on the plate.
  • Tall rings of 5.5 or 6 cm leave room for a mousse with an insert, a small charlotte or several layers.
  • Several identical rings: order a number of the same ring so that every portion looks the same. When preparing desserts for a buffet, you can then set many even portions in one go.
  • Smooth sides: line the ring with a strip from our Rhodoid category before filling it; even soft creams will then release cleanly.

Frequently asked questions about dessert rings

Can I bake in a dessert ring?

Yes. Place the ring on a tray lined with baking paper and grease it well beforehand, most easily with a non-stick spray. This lets you bake small tartlets or little cakes directly in portion size. The ring also works as a round cutter for dough or fresh pasta.

How do I lift a dessert ring off a set mousse without damaging it?

Let the mousse set completely in the fridge, ideally overnight. Then slide the ring upwards; with acetate film inside, the sides stay smooth. If the ring sticks, warm it briefly with your hands.

For large cakes, you will find suitable rings in our Round cake rings category. All other rings and frames are gathered in our Cake rings & baking frames category.
