Rolling tips
- Roll cookie dough and shortcrust while chilled on a lightly floured surface; wood holds a little flour, so the dough sticks less.
- For fondant and marzipan, a smooth plastic or silicone rolling pin works best; dust the surface with cornflour instead of flour.
- Run the embossed rolling pin over the already rolled dough once or twice with light, even pressure, so the pattern stays crisp.
- Keep wooden pins out of the dishwasher: wipe them with a damp cloth and let them dry thoroughly.

Rolling pin with or without handles: what is the difference?
A rolling pin with handles turns on its axis while your hands stay on the handles and apply plenty of force, which helps with firm dough. A pin without handles is guided directly with your palms, so you feel the thickness better, a real advantage with fondant.
How long should a rolling pin be for covering a cake with fondant?
Choose a long pin such as the 49 cm silicone rolling pin or the 50 cm non-stick rolling pin, so you can roll out the whole sheet without joins. For flowers and small figures, a short pin is enough.
