Good bread starts with the right raising agent: in our baker's yeast category you will find everything to make your dough rise beautifully – from classic dried yeast and powdered sourdough to Lievito Madre natural yeast. Two digital scales complete the range, so you can weigh even the smallest amounts accurately.

Dried yeast is available in a jar or in a handy 6 x 11 g pack. The sealed sachets keep for a long time, which makes them ideal if you only bake now and then – for a Sunday plaited loaf, pizza dough or bread rolls; an opened jar, on the other hand, should be used up within a few weeks. For more flavour, turn to sourdough: the sourdough starter powder (160 g) lets you build your own starter, while the rye and wheat sourdough powders (500 g each) add the typical, slightly tangy note to loaves, rolls and baguettes – with no starter to maintain. Lievito Madre comes from the Italian baking tradition and is a fine powder based on wheat sourdough: it suits white breads, pizza, plaited loaves and brioche, and its rising power lets you cut down on yeast.

Tips for working with yeast and sourdough

  • Weigh precisely: yeast works even in small amounts. The digital spoon scale or the precision kitchen scale helps you measure accurately.
  • Keep salt and yeast apart: do not pour salt directly onto the yeast; mix it into the flour first.
  • Not too hot: use lukewarm liquid, as water that is too hot weakens the yeast.
  • Take your time: a long, cool rise in the fridge gives more flavour and a light, open crumb.

Frequently asked questions about baker's yeast

Can I use dried yeast instead of fresh yeast?

Yes. Dried yeast can be mixed straight into the flour without dissolving it first. One 11 g sachet replaces a 42 g cube of fresh yeast; the exact dosage is stated on the packet.

Do I need extra yeast with sourdough powder?

Yes, with the rye and wheat sourdough powders: they are not raising agents but add flavour and acidity – the dough still needs yeast or an active sourdough. The sourdough starter is different: you use it to build your own starter, which works as a raising agent once it doubles within about three hours of feeding.
