Chocolate mold bunny in Easter basket

Use high-quality couverture chocolate, temper in three stages - melt, cool and reheat - and check the processing temperature with a chocolate thermometer. You can find instructions for correct tempering on our blog under "Make your own chocolate". What is the best way to prepare the mold? Rinse it with lukewarm water and a mild detergent without lye and without rinse aid, rinse with lukewarm water, dry thoroughly and polish the surface with lint-free absorbent cotton or a very fine handkerchief. Do not touch the surface directly afterwards and work at room temperature. Ideal for detailed Easter figures that you make up as desired beforehand: start with the pupils in dark, tempered couverture using cornet, color larger areas with a brush and then add accents with white couverture. White couverture can be colored with fat-soluble powder paint - all utensils must be clean, dry and free of grease. Allow each layer to dry briefly and turn the mold over from time to time to check the result Once the decoration is set, brush the entire mold with the desired main type and avoid air bubbles. Clean the edges with a metal horn, place the mold halves together and fill the mold completely. Tap the edges with a chocolate hammer or spatula handle, drain off any excess couverture and repeat the process if necessary until the wall thickness is correct. Remove drops and chill for 5-10 minutes. Spread a base of couverture on baking paper, press the chilled mold into it and chill for another 5-10 minutes. Remove the clamps, chill again and carefully remove the figure from the mold with a spatula after around 30 minutes; break off the excess base and wrap the figure. Dimensionally stable polycarbonate molds are ideal for brilliant results: They are transparent, robust and their behavior during cooling makes them easy to unmold. Silicone tends to adapt to the mass and is less suitable for chocolate products. With the chocolate rabbit mold, you can create an elegant Easter figure with clean details.
