Wafer paper for nougat is the little trick that makes homemade nougat look like it came from a confectioner. Our ribbed wafer paper sheets made especially for nougat go under and over the nougat mixture: nothing sticks to the tin, board or knife, and the pieces cut cleanly. The wafer paper is simply eaten along with the nougat. The set contains six sheets.

This is the white nougat made with honey, egg white and sugar and studded with almonds, hazelnuts or pistachios – not the soft chocolate-hazelnut nougat paste – a festive treat loved in French-speaking Switzerland, and known as torrone in Ticino and Italy. The fine ribbing of the sheets gives the surface its familiar texture and turns your bars into an eye-catching gift. Cut to size and nicely wrapped, homemade nougat is a much-loved present during Advent and at New Year.

How to use the wafer paper

  • Line a tin or frame with a sheet before the mixture is ready – nougat sets quickly.
  • Spread the still-warm mixture over the sheet quickly and cover it straight away with a second sheet.
  • Press down lightly with a board and leave the nougat to cool completely, ideally overnight.
  • Cut into bars or cubes with a large, lightly oiled knife and store in an airtight container.

Frequently asked questions

Do I need to remove the wafer paper before eating nougat?

No. The wafer paper is edible and is simply part of the nougat. It also stops the pieces sticking to each other or to your fingers.

Can the nougat wafer paper be used for other sweets?

Yes, other sticky confections such as honey and almond bars can also be shaped and cut between sheets of wafer paper. The ribbed sheets are, however, designed especially for nougat.
