Evenly baked cookies start with the right surface: this category brings together baking trays, mats and cooling racks that take you from cutting out to cooling down. You will find two perforated aluminium trays measuring 40 x 30 cm – one completely flat without a rim, one with a small rim –, plain, perforated and micro-perforated silicone baking mats, baking paper sheets and baking paper in a dispenser, plus silicone moulds for tartlet cookies and finger cookies. For cooling there are round, rectangular, stackable and folding racks, some made of stainless steel.
Getting the most from tray, mat and rack
- Perforated tray plus perforated mat: the holes let hot air circulate; on a perforated mat or tray, shortbread spreads less and browns evenly. The flat tray without a rim is the ideal base for the perforated mat.
- Mind the temperature: the perforated aluminium trays are recommended up to 180 °C and the baking paper sheets up to 200 °C. The silicone mat with printed measurements and conversions, on the other hand, is heat-resistant up to 230 °C.
- Cool straight away: move cookies onto a cooling rack straight after baking so the base does not turn soft. The set of three stackable Wilton racks saves space when several trays come out of the oven at once.
- Rack as glazing station: round and rectangular racks are also handy for glazing; a container underneath catches the excess.

Which perforated tray goes under a perforated mat?
The flat perforated tray without a rim: the mat lies completely flat on it and air reaches the underside of the cookies through both sets of holes. At 40 x 30 cm it matches the size of the perforated Silikomart mat.
Does the micro-perforated silicone mat replace baking paper?
Yes, the micro-perforated silicone mat replaces ordinary baking paper and can also go in the freezer. Baking paper in a dispenser remains handy for freezing bakes without them sticking together.
