With Russian piping tips you pipe an entire flower in a single squeeze. Instead of a simple opening, these large nozzles have a cut-out top plate with several slits that form the petals and centre at the same time – ideal for flower cupcakes, spring cakes and anyone who wants pretty blooms without hours of practice.
Consistency is everything: the icing must be firm, otherwise the petals collapse. American buttercream, slightly chilled Swiss meringue buttercream or Enchanted Cream all work well; whipped cream is usually too soft. Place the tip upright directly on the cupcake, squeeze firmly until the flower is about 1 cm tall, stop squeezing and lift the tip straight up. Wipe the tip clean between flowers.
These stainless steel tips are too large for standard couplers. Put them straight into a large piping bag or check the diameter of a large coupler. To clean them, soak in hot water and brush out the slits with a nozzle brush.
Usually the icing is too soft or too warm. Chill it for 10 to 15 minutes, then beat it briefly.
