With the Martellato praline mold, you can create gifts, seasonal motifs or a charming bear parade for any occasion. How is it used? Clean and polish the mold lukewarm, work at room temperature and temper high-quality couverture in three stages (melt, cool, reheat); check the temperature with a chocolate thermometer. Optionally, brush in cocoa butter colors, pour in the couverture, tap out air bubbles, let excess chocolate run out, clean the edges, cool briefly, fill in the ganache, let it set, seal with couverture and decorate as desired. Finally, place the filled praline mold in the refrigerator for approx. 20 minutes.
