Red, fruity, indispensable – the glacé cherry in patisserie

Glacé cherries have been an indispensable ingredient in patisserie for generations – as the classic decoration on Black Forest cake, as the vivid red finishing touch on Frankfurter Kranz, and as a finely chopped ingredient in the traditional Florentine. Their origins lie in the centuries-old technique of candying, which makes it possible to preserve fresh fruit without sacrificing flavour, texture, or appearance. RUF glacé cherries consist of 54% real cherries, preserved in sugar and glucose-fructose Syrup. Through traditional multi-stage candying they are made shelf-stable and acquire their soft, shape-retaining consistency. The natural colouring gives them their characteristic, vivid red colour that immediately catches the eye on any baked good. A delicate hint of citric acid rounds off the sweet, fruity Liquid aroma and provides a pleasant, light freshness on the finish. The product contains the natural colourant carmine of animal origin and is therefore not suitable for a vegan or vegetarian diet. Simply open, decorate straight away – and done

Handling is straightforward and requires no preparation. Take the cherries directly from the packaging and place them on the baked goods. For cakes, they are positioned decoratively after the cream has been spread or the icing applied – individually for an elegant, classic look, or clustered together for a lush, fruity impression. Embedded in a jelly glaze they retain their vivid colour particularly well and look as though freshly picked. When incorporating them into a batter, it is advisable to dust the cherries briefly with a little flour beforehand so that they are distributed evenly throughout the batter and do not sink to the bottom – this ensures that bright red dots appear throughout every slice, making any cake instantly more attractive. The range of uses extends well beyond Cake decoration, however: on fruit flans and fruit tarts they add vivid colour accents alongside strawberries, blueberries, and mandarins. In Cream slices, yoghurt cakes, and cheesecakes they bring fruitiness and colour to every bite. As a topping on cupcakes and muffins they turn simple baked goods into a striking visual without any extra effort. In layered desserts, trifles, and glass desserts they create vivid colour layers and a fruity contrast to the creamy filling. Finely chopped glacé cherries are particularly well suited to making Florentines – one of the best-known baked goods of classic confectionery. In the traditional Florentine, a mixture of butter, sugar, cream, and chopped almonds is brought to the boil and refined with finely chopped glacé cherries, which lend both flavour and colour to the brittle. The mixture is spread thinly onto baking paper or filled into round moulds and baked at a moderate temperature until the almond brittle is evenly caramelised. Once cooled, the underside is coated with tempered dark couverture chocolate – the characteristic wave pattern is created by drawing a fork through the chocolate while it is still soft. The finely chopped glacé cherries contribute a fruity flavour accent to the caramelised brittle, add colour accents to the golden-brown almond mixture, and give the Florentine its unmistakable, festive character.

Stored correctly – always ready to hand

The glacé cherries should be stored in a cool, dry place and kept away from direct heat and sunlight. Heat and moisture can alter the consistency of the cherries and impair colour intensity – a cool, dry storage location is therefore ideal. Unopened, they keep for up to 18 months – a reliable storecupboard ingredient that is always on hand when needed. After opening, reseal the packaging well and use promptly so that colour, Liquid aroma, and consistency are preserved.
