Glycerine, 120 g
Glycerine is a colorless, odorless humectant with a slight sweetness that reliably supports doughs, glazes and sugar work. What is it suitable for? It keeps cakes moist for longer, makes buttercream silky smooth and gives icing a radiant shine; when cooking sugar, it prevents crystallization and ensures fine textures in caramel, fudge and truffles. How is it used? Add a few teaspoons to the cake batter or a little to the icing; especially with fondant, glycerine provides the necessary moisture, makes it easier to roll out and, as a natural preservative, can extend the shelf life of fondant and icing masses. If your fondant has become hard, a small amount of glycerine is sufficient; knead the mixture well until it is flexible and elastic again.
