Finely balanced milk couverture with a 38% cocoa content made from cocoa beans from Grenada develops a harmonious profile with notes of milk caramel, almonds and blossom honey, gently rounded off with vanilla. What is it suitable for? For depositing pralines and bars, for elegant chocolate decorations and as a glaze for cakes, patisserie and desserts. How is it used? Before processing, couverture chocolate is tempered in the classic way: melt, cool and reheat to processing temperature; a chocolate thermometer helps to check the temperature. Prepare the molds with lukewarm water and mild detergent, rinse off any residue thoroughly, dry them very well and polish them with lint-free absorbent cotton; then do not touch them directly, keep the mold at room temperature and tap the filled mold carefully to remove any bubbles.
